Crunchy Green Beans with Caramelized Garlic & Onion
#apartment5c: I always get started with music. Sometimes caught in indecision or randomness, i hit shuffle and let fate decide. Other times, I let a mood, the weather, or nostalgia do the choosing. Music and food always make a beautiful pairing.

Trim and clean the green beans.
Dice the garlic or put it through a garlic press (@casualsass put me onto the joys of the garlic press).
Using a sharp knife, finely slice the onion.
Heat about two tablespoons of grapeseed oil on medium heat.
*I used a wok
Add onions and let them cook down until they are browning on the edges.
Add the garlic and season with sea salt, black pepper and about one teaspoon of smoked paprika.
Let the onions and garlic soften and brown before adding the green beans. Stir to coat the beans in the smoky, salty softened onion.
Cover and let it steam.
Continue stirring until green beans are vibrant green and coated in soft onion, but still crunchy. This was about 10-12 minutes of cooking for me.
*Feel free to cook them to your desired firmness
Reseason if necassary.
